The Infusion Spiral system is the reliable oak alternative for simple and fast extraction of toasted oak aroma and flavor compounds that deliver refined, integrated results eight times faster than, and at a small fraction of the price of, a new barrel. Distilleries are thinking outside the box with the Infusion Spiral. Savings in cost, labor and time come to the production process of spirits when Oak Spirals are used in place of traditional barrels. What’s more, it’s easy to experiment with new woods and toasts by ordering our carboy spirals in medium and heavy toasts.

The big surface area of the spiral design allows a shorter pickup time of wood character.  The spiral shape achieves maximum accelerated extraction time. Place directly into the spirits.   Toasting is a process measured in time & temperature, not color. Differences in darkness or lightness of identically toasted woods is due to natural differences in the wood before toasting, such as grain tightness & moisture, each of which falls into a range of values that meets our standard.

American Heavy Toast - The high-temperature toast, Heavy, creates pronounced caramelized wood that adds notes of smoke, toasted bread and dark chocolate. French oak will provide a milder aroma and flavor impact than American oak, and more tannin.

American Light Toast - Made using the coolest oven temperature of the four single-toast choices, Light Toast contributes noticeable structure with its high tannin content while highlighting natural flavors in your beverage. Light Toast is also good for reducing vegetal character in wine. French oak will provide a milder aroma and flavor impact than American oak, and more tannin. Light Toast American Oak will give a noticeable coconut contribution.

American Medium Plus Toast - Increased oven temperature begins to develop some caramelized sugars that contribute aromas of honey and roasted nuts with a hint of coffee and spice. Notes of mocha and chocolate are noticeable on the palate. French oak will provide a milder aroma and flavor impact than American oak, and more tannin.

American Medium Toast - A mid-level temperature that showcases the natural vanillin compound in oak, Medium Toast offers a sweet bouquet with warm vanilla overtones. French oak will provide a milder aroma and flavor impact than American oak, and more tannin.

American Oak Char #3 - Adds super dark color, smoke, vanilla, and caramel flavors with nice tannin structure. Our standard, a #3 char provides the most vanillins. Caramel and toffee flavors are also present that work well for Bourbons and provide a beautiful dark amber color.

French Light Toast - Provides oak structure without being overwhelming, lifting the varietal's attributes and allowing the fruit to shine. The flavors offer delicate sweetness, prominent oak spice, with a vibrant fruit-driven finish.

French Medium Plus Toast - Provides complex, pleasant and well defined toasted oak characters and aromas of vanilla, toffee, butterscotch, chocolate, coffee, mocha, graham cracker, with a touch of nutmeg and clove.

French Medium Toast - Provides complex, pleasant and delicate toasted oak characters and aromas of vanilla, caramel, chocolate, hazelnut, oatmeal with honey, graham cracker, with a touch of cinnamon and nutmeg.

Sugar Maple Toast - Sugar Maple (Acer saccharin) also known as Rock Maple or Hard Maple, contributes subtle notes of maple syrup, with a soft sweetness when applied to whiskey during the aging phase for up to six weeks.

Suggested Application:

1 stick per 3 gallons.  Spirals may be snapped into smaller portions to achieve desired flavor intensity,    Oak flavor is fully extracted in 6 weeks. Withdraw sooner for a milder taste.
