Barley gives the whiskey weight, depth, and a taste profile unique to pot still whiskey.  Barley is the foundation of single malt whiskey, with the law stating that it must be made from "barley, yeast, and water". Barley contributes to the rich, sweet, and sometimes nutty flavors often found in whisky.
